World's easiest recipe, kid friendly, kind of fun, mostly sticky but a whole latta good-for-you.

Protein Balls. These little guys are something I even up eating for breakfast every morning come Spring. I know we're not there yet, guys but I am dreaming of sunshine and sand all ready. When I'm in the early months of the year it's hard for me grasp that it's technically still winter. Especially when Spring fashion has already started. It's absolute torture.

These protein packed snacks give me a little taste of summer mornings that I need to get through the dreary PNW weather. For the record, I do eat these. I have many co-workers who can attest to this because they often ask for them... or the recipe. Hence, why it's going up on the blog.

You're right, it's not a salad, but it's sunshine rolled up in a ball! And who'd going to argue with that??

These lil' guys are a breeze. You literally add everything into a bowl, mix it together and then form into balls. Place on wax paper, let them sit in the fridge, separate into baggies and you've got breakfast, snacks and dessert for the whole week.

Keep in mind, these are higher in calories due to the peanut butter. If you have a peanut allergy, can sub the peanut butter with any other nut butter. For those with a tree nut allergy, I'm sorry, this recipe has both coconut AND walnuts in it. (Sorry, Sister!)

What I do love about these is how you can mix them up. You can add what you love and take out what you don't. I have a few other recipes for protein balls. I'll definitely share them if you guys are interested. Just let me know in the comments below.

Coconut Chocolate Peanut Butter Protein Balls

Perfect morning protein pack rolled with peanut butter, sweet cranberries, coconut flakes and flaxseed. Sweetened with organic local honey for the sweet tooth cravings!

Recipe by: The Salad Trip

Ingredients: 
- 3/4 Cup Peanut Butter, natural
- 1/4 Cup Flaxseed
- 1/2 Cup Walnuts, chopped
- 1/8 Cup Rolled Oats
- 1 Tbs Protein Powder
- 1 Tbs Honey, local & organic
- 1 Tbs Coco Powder, unsweetened
- 1 Handful Cranberries, dried

- 1/4 Cup Coconut Flakes (set aside)

** Don't use Protein Powder? Sub in 1/4 Cup Rolled Oats, instead of 1/8 Cup.

Instructions:

Add all ingredients, except for the coconut flakes, into a medium mixing bowl and stir with a spoon or a spatula.

Once combined, roll a Tbs worth of dough into a ball.

Sprinkle coconut flakes out on a chopping board or flat surface. Roll ball over flakes til nicely coated.

Set on wax paper and allow to refrigerate over night. Back up into baggies for snacks, breakfast or a quick sweet fix that healthy and enjoyable.
